make sure your espresso machine is turned on and properly heated up. this is crucial for consistency and flavor.

grind your coffee

grind fresh coffee beans to a fine consistency using a burr grinder. the grind size should be adjusted according to your machine and your coffee beans.

finding the right grind size for your beans comes through trial and error!

preheat your portafilter and cups

run some hot water through your portafilter and cups to preheat them. this helps maintain the optimal temperature for extraction.

dose and distribute coffee

measure out the appropriate amount of coffee grounds for your portafilter. distribute the grounds evenly using a distribution tool (wdt) or by tapping and leveling with your fingers.

tamp the coffee

use a tamper to press down on the coffee grounds in the portafilter with firm and even pressure. the goal is to create a level and compact coffee puck.

lock in the portafilter

insert the portafilter into the espresso machine's group head and lock it in securely.

start the shot

place your preheated cup(s) under the portafilter spouts. start the shot immediately after locking in the portafilter.

monitor the extraction

watch the espresso as it flows into the cup. the ideal extraction time is typically around 25-30 seconds, with a total volume of 1 to 1.5 ounces (about 30-45ml).

evaluate and adjust

pay attention to the color, crema, and taste of the espresso shot. adjust the grind size, dose, or extraction time as needed to achieve the desired flavor profile.
